Chablis "Les Serres" 2007, Domaine Oudin

This Chablis 2007 has a medium to light straw colour reflecting the 5 years of evolution since the harvest. Gentle aromas of dried lemon peel, hay, warm stones. Like many Chablis village wines, one really has to sniff deeply to pick up the aromas. Good matiere on the palate, vibrant acidity, classic minerality and limestone dryness. Impressive that the wine has aged so well but I do not expect anything more from it since it is already falling away on the nose. Scores 20 / 30 for a Chablis. Photo shows the Chablis vineyards in April 2009. Note the chalky soils.
